Suggest Some Quick & Easy Low Carb/Veggies Items to Lose Last 20lbs

Ok, dinners are starting to get boring. I need QUICK, EASY, and SIMPLE (I HATE cooking) dinner menus that are the main dish and sides. I’m trying to lose the last 20lbs to be where my weight should be so nothing too fattening, basically a meat and veggies/low carb sides. Being Gluten-Free is really challenging when you live in the land of fried everything. And before anyone asks, no, being Gluten-Free has NOTHING to do with the losing weight. I wish I could eat what I wanted! No nuts, highly allergic, (yeah, that’s a hard one when GF) no mayo, tomato sauce (fresh tomatoes are just perfect, love em) or avocados
I know I’m asking for a miracle, but … GO!

    There's the gluten-free pasta that you can do whatever you want with…not my favorite but my family will do butter, peas, and grated cheese on their noodles as an alternative to tomato sauce. I just made some bbq shredded chicken that I layered on Tostitos and cheese…microwave or throw in the oven for a minute to melt the cheese…pretty yummy. You could make a pasta Fagioli and rather than using a tomato juice base use a vegetable juice base, or a homemade chicken soup. Breaded chicken, using cornmeal rather than bread crumbs.

    Could you do either an egg salad or chicken salad with greek yogurt? I'm doing a beef roast in the crockpot with water and seasonings then steamed carrots. Cut zucchini squash and squash into slices and saute in avocado oil or olive oil with seasonings. You can add gluten-free bread crumbs and parmesan cheese if you wanted. Maybe use the lose it app to track calories for the last 20? Or an app similar. Chicken Apple Sausage sliced with bell peppers and onions with a little oil. A sloppy Joe type meat (can you do barbecue sauce?) with green beans.

    Do you like fish? Sauteing tilapia in butter or olive oil with garlic and herbs is a super quick and simple meal. Serve with some steamed vegetables and/or a green salad. Bam. Dinner on the table in under 20 mins.

    Another family favorite (esp in the summertime) is what we call "Big Salad" – I plate out greens and then place bowls of turkey/ham, cheese, chicken cucumbers, tomatoes, peppers, GF croutons, etc. (Basically, whatever you like) – along with dressing and everybody makes it to their liking.

    You can do easy roasts in the slow cooker. Roast chicken: Peel & chop potatoes, pumpkin, carrots, toss with salt and dried rosemary and place in the bottom of the slow cooker. Peel a small onion and cut in half, place inside the chicken. Rub the outside of the chicken with a little oil mixed with salt, pepper & garlic. Place on top of vegetables. Cook on low 4-8 hours depending on the size of the chicken (meat thermometer in the thick part of the leg should read 160 C). You can brown the chicken once it's cooked under the grill. Chicken schnitzels using crushed rice crackers instead of bread crumbs, Fillet skinless breast fillets. Dip them into seasoned rice flour, into an egg wash then in the crushed rice crackers. Spray both sides with cooking spray (make sure it's Gluten Free) and bake them in the oven. Serve with steamed vegetables or salads. I also make fish cakes with rice crackers instead of crumbs. Mix drained tuna (GF), thick mashed potato (sweet potato mash is also good and low carb), salt & pepper, dill. Mix well, roll into balls then in seasoned rice flour, egg wash and then crumbs, spray both sides and bake in the oven. Serve with salad or vegetables.

    I am a huge fan of Chipotle and if I could eat it every night and afford it I would but I can't, so I now make my own bowl at home. And I measure everything, so I know exactly what's in it. I use rice that I flavor with chicken broth and turkey chop meat or lean pork and then light sour cream light cheese, and I have my $9 bowl from Chipotle. I also do the stand-up taco shells with all the same ingredients. Another favorite of mine is the Bisquick incredibly Easy Pie, gluten-free. I use a ton of vegetables, broccoli or asparagus, low-fat cheese, and milk. I also use one extra egg than the recipe calls for it to make it more quiche-like and it's very filling and I have that with a salad…

    I made baby red potatoes in the oven cut them in half the long way put them on tin foil on a baking sheet set the oven to broil then top the potatoes with olive oil and salt to taste cook them for 15-20min. Then in a pan brown ground beef add a yellow onion or any kind that you like and baby Bella mushrooms add garlic powder and butter to taste (make sure mushrooms are cooked all the way through so chop them in slices) and then boil corn on the cob in a pot and when your all done put the potatoes on a plate smash them and top with the ground beef mixture and put sour cream and butter on it. And eat the corn on the cob normal lol. It's a quick dinner low carb and not a lot of fat the only fat is the grease in the ground beef and butter.
