    Iron is good. Though cooking with citrus items like tomatoes and lime can react with iron. You also need to empty it immediately after cooking. I'd instead go with a steel one. A thick and heavy steel Kadai is good. Doesn't burn, no reaction with any food and can even keep in it till dinner time. Just bought this a couple of days back. Very happy with it.

      We use iron to react and get utilised by our body. The body needs iron. Steel can contain many other metals if not authentic .iron is best between steel and aluminium. You have to maintain it by oiling.

        I'm not sure how far that's true. Cause there is something as too much iron too. If one is getting a sufficient amount from food intake, all these measures aren't required. Also, it is highly advised that if you are cooking with citrus ingredients in an iron utensil, then you need to refer the contents immediately after cooking. You cannot leave it in the iron vessel. Authenticity is questionable for all materials whether it's iron, aluminium or steel. That's why one needs to buy a good quality branded utensil for cooking.

    Metals react with acids. Aluminium is a heavy metal like lead. It will react with acidic food and becomes its salt and goes inside your body and will never leave you, after some time it causes cancer. Our body consumes iron; blood has iron as its main component. If it's not a suitable steel vessel, you buying can contain many other metals. Buy authentic ones if you are very much into health. Anyways to avoid aluminium.
